Jalebi Rabri Dessert Cup

Ingredients
- RABRI
- Full-fat milk - 500g
- Condensed milk - 50g
- Sugar - 25g
- Cardamom - 1g
- Saffron - few strands
- RABRI ICE CREAM
- Prepared Rabri - 180g
- Full-fat milk - 60g
- Fresh cream - 40g
- Milk powder - 10g
- Sugar - 10g (optional)
- Jalebi - 20g (Mix-In)
- DESSERT CUP COMPONENTS
- Rabri Ice Cream - 2 generous scoops (approximately 180g)
- Mini Jalebi Pieces - 40g
- Chilled Rabri - 20g
- Pistachios - 5g
Method
- STEP 1 – REDUCE THE MILK:
- Pour milk into a heavy-bottomed saucepan.
- Bring to a gentle simmer over medium-low heat.
- Stir frequently to prevent scorching.
- As cream forms on the sides of the pan, scrape it back into the milk periodically.
- Continue cooking until the milk reduces by approximately 35–40%, yielding a thick and creamy consistency.
- STEP 2 – FLAVOUR THE RABRI:
- Add condensed milk and sugar.
- Stir until completely dissolved.
- Add cardamom powder.
- Crush saffron strands lightly and soak them in 1 teaspoon warm milk for 5 minutes.
- Add the saffron infusion to the rabri.
- Cook for an additional 2–3 minutes.
- Set aside to cool.
- STEP 3 – PREPARE RABRI ICE CREAM:
- Place chilled rabri into a blender.
- Add milk, cream and milk powder.
- Blend until completely smooth.
- Pour mixture into a KILIG container, below the MAX FILL line.
- Freeze for 24 hours.
- Run in Ice Cream Mode.
- Mix in the Jalebi.
- STEP 4 – ASSEMBLE THE DESSERT CUP:
- Layer 1: Spoon 10g chilled rabri into the base of the dessert cup and scatter a few jalebi pieces.
- Layer 2: Add the first scoop of Rabri Ice Cream and arrange additional jalebi pieces around the scoop.
- Layer 3: Add the second scoop, spoon the remaining rabri over the top, and arrange remaining jalebi pieces decoratively.

Crispy jalebi meets rich, creamy rabri.
Serving Suggestions
Finish with: Pistachio dust, Dried rose petals, Saffron strands, Optional edible silver leaf.
